Recipe: Vegan Pancakes

Pancakes are for weekends and weekends are for pancakes. Agree?

There’s not much to say about these super delicious treats so let’s get right into the details of the recipe. Here’s what you need for 2-3 people:

1/2 cup flour
1 teaspoon of baking powder
1 teaspoon of baking soda
1 cups cashew milk
2 tablespoons of apple cider vinegar
zest of 1/2 a lime
1/4 cup water
2 tablespoons brown sugar
1 tablespoon of melted coconut oil
1/4 cup vegan chocolate (I use Alnatura dark chocolate)

First combine all the dry ingredients except for the sugar.

In another bowl add vinegar to the cashew milk and let sit for 5 minutes. After the milk thickened a bit, add zest, sugar and oil.

Add the cashew milk mix to the dry ingredients and mix with a hand mixer. Then add the finely chopped chocolate to the batter and stir with a spoon.

Heat a non stick pan to medium heat and add the batter in order to form small pancakes. Cook for 2 to 3 minutes on each side.

Serve with fruits and maple syrup or up to your taste.
