Seriously, who doesn’t like Chocolate Mousse? This recipe is so incredibly easy and yet tastes so good, that no one will ever believe that it is vegan. Even the most hostile omnivores will be convinced that vegan food tastes good after all.
Here’s what you need:
200g vegan chocolate (I used dark one, but you can used whatever kind you like)
300g silken tofu
3 Tsp soy milk
1 tsp vanilla extract
2 Tsp Espresso
1-2 drops of almond extract
1/8 tsp cinnamon
Melt chocolate in a bain-marie, be sure to melt it slowly, when it’s too hot the chocolate will lose its capability to bond and taste bitter.
Meanwhile, in a different bowl, mix silken tofu with soy milk, coffee, almond extract and cinnamon with a hand-blender, until foamy.
When chocolate is all melted, add it slowly to the tofu mix and keep blending.
Fill your jars with the mousse using a pastry bag and refrigerate for at least 2 to 3 hours.
Decorate with fresh fruits, coconut grater and pistachio chips.
